Valentine’s Day Mug Cake Recipe

In December, I bought a pink Christmas tree.

Because it is pink and Valentine’s Day is all about pink, I’ve decided to keep it up until February 14th so it can be our Valentine’s Day tree too!

This year, I’m leaning into all the festive desserts that can be made single-serve.

I’m excited to be bringing you lots of holiday mug cakes this year, starting with a Valentine’s mug cake!

Ingredients You’ll Need to Make this Valentine Mug Cake

Let’s talk about what you’ll need to make this single serving Valentine dessert!

You’ll probably have all these things in your kitchen already (with the exception of maybe one thing!)

  • all-purpose flour (can sub with an all-purpose gluten-free flour mix)
  • cocoa powder
  • granulated sugar (plain white, date sugar, coconut sugar, erythritol, etc.)
  • baking powder
  • salt
  • melted butter or oil
  • milk (any kind you like)
  • Valentine-themed marshmallows (can use vegan marshmallows)

The marshmallows are the star of this Valentine recipe!

If you can find them, use heart-shaped marshmallows, or pink marshmallows (these strawberry marshmallows would be delish!).

Regular marshmallows will work in a pinch.

If you’re vegan, this brand of vegan marshmallows is delicious.

If your marshmallows are small, you’ll be able to fill the middle and top with more than one or two marshmallows.

I found these cute pink and white hearts, and they were pretty big, so I’d only want to put one or two marshmallows in the middle, and a couple on top (you can always use more!!)

Valentine’s Mug Cake Tips

This mug cake batter will be thick. It won’t be very pourable and will be little hard to spread. This is what you want! The batter is thick so that those fluffy pink marshmallows will stay right where they’re supposed to in the middle of the mug cake, and not sink to the bottom.

Spoon about half of the batter into your mug, and spread it out with the back of a spoon or with a knife. Make a little indent in the center and fill it with the chocolate chips and marshmallows. Then spoon out the rest of the batter gently over the filling. I used a knife to spread it around so it covered the filling. That’s it!

You can use a gluten-free all-purpose flour mix (like this one) instead of the regular flour in this mug cake recipe. Coconut flour will not work as a sub in this recipe; I haven’t tried with almond flour. Almond flour might work, but you might need to adjust the microwave time a little. You can also try these almond flour mug cake recipes.

For the cooking time – this can vary with different microwaves and also with different mug sizes. It took my microwave 60 seconds to cook perfectly. The first time you make this mug bread, watch your microwave.

Test doneness, and if it needs a bit more time, add on 15 seconds at a time until it’s fully cooked. The next time you make it, you’ll know exactly how long it takes in your microwave!

Ingredients

  • 3 tbsp all-purpose flour (can sub with an all-purpose gluten-free flour mix)
  • 1 tbsp cocoa powder
  • 2 tbsp granulated sugar (plain white, date sugar, coconut sugar, erythritol, etc.)
  • ½ tsp baking powder
  • 1 pinch sea salt
  • 1 ½ tbsp melted butter or oil
  • 2 tbsp milk (any kind you like)
  • 2 tbsp Valentine-themed marshmallows (can use vegan marshmallows)

Instructions

  1. In a small bowl mix together the flour, cocoa powder, baking powder, sugar, and pinch of salt.
  2. Add in the melted butter or oil and milk, and stir until mixed.
  3. Batter will be thick, don't be alarmed. 🙂
  4. Spray your mug with cooking spray and spoon in half the batter.
  5. Spread out the batter with the back of your spoon or a knife.
  6. Make a little indent in the middle of the batter, and fill it with half of the marshmallows.
  7. Spoon the rest of the chocolate batter over the filling, and gently spread it out to cover the marshmallows.
  8. Microwave for 1 minute.
  9. My mug cake was perfectly done at 1 minute; if yours needs a bit more time, add 15 seconds at a time and watch it.
  10. Top with the extra marshmallows and enjoy!
