I love cinnamon rolls, but they can put a bit of time to put together.

I also can eat WAY too many cinnamon buns if I make an entire batch, so I love this single serving cinnamon roll in a mug.

All the gooey cinnamon roll sweetness with none of the tempting leftovers.

It takes like 2 minutes more than making a typical mug cake where you pour, mix, microwave.

With this cinnamon roll in a mug, you make a tiny rectangle of dough, sprinkle it with cinnamon sugar and roll it up! You can use a rolling pin or even spread out the dough with just your hands. It will look rougher, of course, but this isn’t culinary school – this is making a mug cake. 😉

Here’s what you need to make this cozy treat:

For the dough

  • all-purpose flour
  • ¾ teaspoon baking powder
  • Pinch of salt
  • 3 tablespoons milk
  • 1 tablespoon melted butter

For the cinnamon filling

  • 1 tablespoon softened butter
  • 1 tablespoon brown sugar
  • ½ teaspoon cinnamon

For the icing

  • 2 tablespoons powdered sugar
  • ½–1 teaspoon milk
  • Tiny splash of vanilla, optional

You can totally make this microwave cinnamon roll without the icing if you want to save time/lessen the sugar. It’s still completely delicious.

Cinnamon Roll in a Mug Tips and Substitutions

Gluten-free cinnamon roll in a mug

You can make a gluten-free version of this mini dessert by substituting a gluten-free flour mix like this one instead of the all-purpose flour.

I don’t recommend using almond flour or coconut flour because they behave differently with the liquids and it won’t turn out the same.

Cinnamon roll dough

I recommend that you follow the recipe for the dough exactly as is. Because we’re already making a quick version of cinnamon roll dough without yeast, the ingredients we do use are pretty important if we want a soft, non-puck-like dough.

The one sub you could make here is you can use any kind of milk you like instead of the regular milk (almond milk, soy milk, etc.)

For the filling, you can use any sugar you like: cane sugar, brown sugar, date sugar, erythritol, etc.

Ingredients

For the dough

  • ½ cup all-purpose flour
  • ¾ teaspoon baking powder
  • pinch of salt
  • 3 tablespoons milk , any kind you like
  • 1 tablespoon melted butter

For the cinnamon filling

  • 1 tablespoon softened butter
  • 1 tablespoon brown sugar (or you can use any granulated sugar you like)
  • ½ teaspoon cinnamon

For the icing

  • 2 tablespoons powdered sugar
  • ½–1 teaspoon milk , any kind you like
  • tiny splash of vanilla , optional

Instructions

    1. Make the dough.
    In a small bowl, stir together the flour, baking powder and salt. Add the milk and melted butter and stir until a soft dough forms.

    If it's very sticky, sprinkle in a little more flour. You want it soft and easy to work with, not dry.

    2. Roll it out.
    Lightly flour your counter and roll or press the dough into a long rectangle, around3" by 10" (no ruler required - this is a cinnamon bun! lol)

    3. Add the filling.
    Spread the softened butter over the dough. Sprinkle the brown sugar and cinnamon evenly over the top.

    4. Roll it up.
    Starting at one of the short ends, roll the dough into a spiral. You'll end up with one chunky little cinnamon roll rather than a long skinny one.

    5. Put it in your mug.
    Lightly grease a microwave-safe mug or ramekin. Place the cinnamon roll inside with the spiral facing upward.

    I use a fairly wide mug (about 12–14 oz) so the dough has room to expand.

    6. Microwave.
    Microwave on high for60 seconds and then check the center. If the dough still looks wet or raw, continue microwaving in 10-second increments until just cooked through. It should take around 60–90 seconds, depending on the microwave.

    Don't overcook it or you could get a cinnamon-flavored hockey puck.

    7. Frost it.
    Stir the powdered sugar with enough milk to make a thick drizzle. Add a drop of vanilla if you like.

    Drizzle it over the warm cinnamon roll.
