Eggnog can be pretty divisive.
Most people have a strong opinion about eggnog.
They either love it or they hate it.
I am firmly on team eggnog.
I was sad when Starbucks got rid of their holiday Eggnog Lattes. Boo.
And their holiday spice flat white, another favorite.

I love eggnog, but not straight up.
I make my own eggnog lattes now, and I experimented with making an eggnog mug cake until it tasted pretty darn perfect, and was so simple that a cat could make it.

Eggnog Mug Cake Ingredients
Here are the ingredients you’ll need to make this single-serving eggnog cake:
- regular flour or whole wheat flour, or gluten-free all-purpose flour mix
- any granulated sugar, white, coconut sugar, erythritol, etc.
- melted butter or oil (or coconut oil, any oil works)(vegan butter)
- eggnog, any kind
- baking powder
- nutmeg
For the nutmeg, you can use ground nutmeg, or if you have it, it’s extra yummy to use a whole nutmeg and grind your own.
This is much easier than it sounds. You just use a small grater (I love this one and use it all the time for different things), and grate a small amount of nutmeg right into your bowl.
For eggnog, you can use traditional eggnog, or if you’re vegan, you can use an egg-free eggnog (!), like soynog, almond nog, or any other kind of nog.
Tips to Make the Yummiest Eggnog Mug Cake
This really is a very easy recipe so this will be short.
The main thing is to use a big enough mug so it doesn’t overflow everywhere.
And the first time you make this mug cake recipe, put your mug on a paper towel or plate to catch any spills in the microwave.
My mug cake took 90 seconds to cook.
Yours could take 60 seconds or 2 minutes – it depends on your microwave and mug.

Eggnog Mug Cake
This eggnog mug cake is a quick and easy Christmas dessert that is so delicious! Sweet and cozy, this mug cake will become a new favorite winter treat!
Ingredients
- 4 tbsp regular flour or whole wheat flour, or gluten-free all-purpose flour mix
- 2 tbsp sugar, any granulated sugar, white, coconut sugar, erythritol, etc.
- 1 ½ tbsp melted butter or oil (or coconut oil, any oil works) (or vegan butter)
- 4 tbsp eggnog, any kind
- ½ tsp baking powder
- Pinch or two of ground nutmeg
Instructions
- Mix the flour, sugar, nutmeg, and baking powder in a small bowl.
- Stir in the eggnog, and then the melted butter (or oil).
- Pour the batter into a microwave-safe mug.
- Microwave on high for 60 seconds to 2 minutes depending on your microwave.
- Check for doneness at 60 seconds and add time if you need to (mine took 90 seconds to cook perfectly.)
- Top with whipped cream, ice cream, or festive marshmallows and enjoy!
