Do you love all the festive things?

Even before the cooler weather hits, I get excited to see Halloween-themed treats and decor and toys and clothing in stores.

I actually use to eye roll about all this, but a festive gene seemed to kick in after I had my daughter 8 years ago.

Our Halloween decorations get more elaborate each year.

So do our Halloween costumes.

I wanted to make a fun Halloween mug cake for y’all, and when I found these marshmallow eyeballs in the store, I was set.

Halloween Mug Cake

Here are the ingredients you need to make this Halloween mug cake:

  • all-purpose flour (you can sub with an all-purpose gluten-free flour mix)
  • cocoa powder
  • granulated sugar (plain white, date sugar, coconut sugar, erythritol, etc.)
  • baking powder
  • sea salt
  • melted butter or oil
  • milk (any kind you like to drink)
  • marshmallow eyeballs

I couldn’t find the exact same marshmallow eyeballs online as I did in my local store. If you can find them – great!

Otherwise you can use these Halloween candy eyeballs and they will be just as cute.

For the center, you can use regular marshmallows like these, and top with the candy eyeballs.

Halloween Single Serving Cake Tips

When you microwave your mug cake, put the mug on a plate or paper towel to catch any spills.

You’ll want to watch this mug cake while it’s in the microwave since it has marshmallows in it (so it can expand/overflow much quicker!)

Take note that the eyeballs aren’t put on top of the mug cake until you have already cooked the cake for one minute.

This is so the eyeballs keep their shape (they get gooier the longer they are cooked!).

Halloween Eyeball Mug Cake Substitutions

Vegan Halloween Mug Cake

To make a vegan version of this Halloween treat, there are a few substitutions.

Use either a vegan butter like Earth Balance, or oil

For the milk, use whatever vegan milk you like: soy, coconut, almond, oat milk, etc.

It’s not very likely that you’ll be able to get vegan marshmallow eyeballs. You can get these yummy vegan marshmallows. I’m not vegan and I buy them all the time – they are SO good!!

You can use them in the middle of your Halloween mug cake, and on the top.

If you want the true eyeball effect, you can use these vegan eyeball candies for the top instead.

Gluten-free Halloween Mug Cake

Use a gluten-free flour mix instead of the all-purpose flour.

Marshmallows are naturally a gluten-free food.

Everything else is the same!

Reduced Sugar Halloween Mug Cake

If you want to reduce the sugar in this mug cake, use only 1 tablespoon of sugar in the chocolate mug cake batter.

You could also use 1 tablespoon sugar substitute, such as erythritol or monk fruit.

You can skip the marshmallow in the center of the mug cake, and just put the eyeballs on the top of the cake.

This fun Halloween eyeball mug cake will get you into the festive Halloween spirit in 2 minutes! Made with chocolate and marshmallows, this mug cake is an easy single-serving Halloween treat to whip up in the fall (or any time you're craving something spooky yet cute!)

Ingredients

  • 3 tbsp all-purpose flour (you can sub with an all-purpose gluten-free flour mix)
  • 1 tbsp cocoa powder
  • 1-2 tbsp granulated sugar (plain white, date sugar, coconut sugar, erythritol, etc.)
  • ½ tsp baking powder
  • 1 pinch sea salt
  • 1 ½ tbsp melted butter or oil
  • 2 tbsp milk, any kind you like
  • 2-3 marshmallow eyeballs (you can use candy eyeballs instead)

Instructions

1. In a small bowl mix together the flour, cocoa powder, baking powder, sugar, and pinch of salt.

2. Add in the melted butter or oil and milk, and stir until mixed.

3. Spray your mug with cooking spray and spoon in half the batter.

4. Place a marshmallow eyeball on top.

5. Spoon the rest of the chocolate batter over the filling, and gently spread it out to cover the marshmallow.

6. Microwave for 1 minute.

7. After 1 minute, put two more marshmallow eyeballs on top.

8. Microwave for 20-40 seconds more until done (watch your mug cake at this point so the marshmallows don't blow up!).

9. Dig in while your mug cake is warm, and the marshmallows are gooey!
