Pumpkin Spice Cake in a Mug
I really never get tired of pumpkin desserts! They are a year-round treat for me, but as soon as the morning air starts to feel a tiny bit cool, the pumpkin beast in me is unleashed.
I look to all things orange. I practically turn orange, like an autumn version of Hulk (“Pumpkin smash!”).

What is Pumpkin Spice Made Of?
If you don’t have pumpkin pie spice mix, you can easily make your own.
Pumpkin spice mix ingredients are typically these four spices:
- Cinnamon
- Ginger
- Nutmeg
- Cloves
For a quick pumpkin spice mix that you can use in this recipe and anything that calls for pumpkin spice (you can even add some to your coffee or hot chocolate!), use these amounts:
- 1 tablespoons cinnamon
- ½ tablespoon ginger
- 1 teaspoon nutmeg
- 1 teaspoon cloves
Stir it all together and keep in a glass jar.
If you don’t have cloves, you can use allspice instead.

Pumpkin Spice Mug Cake Substitutions
If you don’t have pumpkin spice mix AND you don’t want to mix up your own batch with the pumpkin spice mix recipe above, I gotchu.
This pumpkin cake in a mug recipe is super adaptable. You can use only cinnamon if that’s what you have. You can use a mix of cinnamon and ginger.
Nutmeg and cloves are really powerful, so if you only have those spices, use just a couple of good pinches of each.
(FYI, I’d recommend getting this mix for next time – it’s so fresh and delicious!)
To make this a gluten-free pumpkin mug cake, use a gluten-free flour mix like this one.
This is already an egg-free mug cake, and if you want to make it vegan, use a butter substitute like Earth Balance.
If you don’t have pumpkin puree, but you have pumpkin pie filling, you can use that instead. I would decrease the granulated sugar in the recipe to just 1 tablespoon (or skip it entirely) because the pumpkin pie filling is already sweetened.
