2-Minute Microwave Mug Bagel (No Yeast!)

I love a good bagel. But honestly, we don’t eat a ton of them, me and Miss O.
Every so often I’ll buy a six-pack of beer bagels. And we end up freezing three or four of them.
So I LOVE this recipe to cut down on food waste, still enjoy all that delicious bagel-y goodness, without having a freezer full of crystalized bagel rejects.
No rejects here, only a fresh, warm, single-serve bagel that you can top any way you want to!

The beauty of this bagel is that it’s actually healthy and gives you a hit of protein (while you just taste bagel).
This microwave bagel won’t be as chewy as a boiled bagel, but it’s shockingly bagel-ish for two minutes of effort.
Here’s What You Need to Make This Healthy Bagel in a Mug

You only need two ingredients to make this mug bagel:
- self-rising flour
- Greek yogurt
If you don’t have self-rising flour, this recipe is still super easy.
You’ll just measure our your flour (1/4 cup), add a pinch of salt, and 1/4 teaspoon of baking powder. And then add the Greek yogurt.

Quick Recipe for Small-Batch Self-Rising Flour
- 1/4 cup all-purpose flour (or gluten-free flour)
- pinch of salt
- 1/4 teaspoon baking powder
For the Greek yogurt, plain will make it taste the most classically bagel-like.
You can def mix it up if you want a more dessert-like bagel.
Pumpkin Greek yogurt would make a delicious healthy pumpkin bagel!

If you only have regular yogurt, or low-fat yogurt, you could use that in a pinch.
The bagel won’t be as high-protein as with Greek yogurt, and you might need to add a teensy bit more flour as low-fat yogurt is more watery than Greek yogurt.
Healthy Microwave Bagel Recipe Tips
You can make this single serving bagel gluten-free by replacing the all-purpose flour with any gluten-free flour you like. I like this 1:1 baking flour.
You can double this bagel recipe and make two bagels if you’d like. The only part that you should do separately is the microwaving step – microwave the two bagels separately for best cooking.
Make sure you measure the yogurt and flour correctly. Since are so few ingredients and this is small-batch, the measurements really matter.

As long as the dough comes together in your hands, don’t add more yogurt. You might be tempted, but this will just make a wet bagel and nobody wants a wet bagel.
I am partial to over-buttering my bagel, but I have also had this bagel plain, running out the door, and also topped with cream cheese.
I think it would make a cute sandwich bagel too, though haven’t tried that yet.

Instructions
