Angel Food Cake in a Mug

I honestly wasn’t sure how this angel food mug cake was going to turn out.

I saw so many different versions (which all turned out to be like the same recipe!) using an angel food cake box mix.

Since I don’t usually keep box cake mixes around and prefer making things from scratch, I wanted to try making a single serving angel food cake from scratch too.

It tastes amazing!

This quick angel food cake takes one minute to cook, and only four ingredients.

A bonus is that it’s even low-fat because of only using egg whites and we don’t use any butter or oil either. Woot!

Angel Food Mug Cake Ingredients

You only need four ingredients for this mug cake – it’s super easy:

  • egg whites
  • flour
  • granulated sugar
  • baking powder

Why bother with the cake mix version when this is healthier and just as quick to make?

For the egg whites, you can either use two egg whites from a carton of egg whites.

I don’t usually have just egg whites in my fridge, so I just separated two eggs and put the whites in one bowl and the yolks in the other.

The yolks can be added to this popular mug cake recipe instead of the whole egg (it will taste delicious), or you can add them to an omelet.

Keto Angel Food Cake in a Mug

I tried this angel food cake recipe keto-style and I was really happy with the results!

I personally prefer the original version the best, but if you want or need a low-carb version, this keto angel food cake is pretty darn delicious.

Substitute the regular granulated sugar with any keto sugar you like: erythritol, monk fruit, etc.

For the flour, instead of using regular white flour, substitute an equal amount of almond flour.

It won’t be a true or traditional angel food cake, but you’ll still get that nice fluffy texture that will make it taste similar.

Microwave Angel Food Mug Cake Tips

For the cooking time – this can vary with different microwaves and also with different mug sizes. It took my microwave 60 seconds to cook perfectly. The first time you make this mug bread, watch your microwave.

Test doneness, and if it needs a bit more time, add on 15 seconds at a time until it’s fully cooked. The next time you make it, you’ll know exactly how long it takes in your microwave!

Since egg whites are central to angel food cakes, this mug cake can’t really be made vegan.

If you’re looking for a vegan mug cake, you can try this strawberry mug cake instead.

This angel food mug cake is made in minutes from scratch, not a box cake mix. Sweet and airy, angel food cake in a mug makes the perfect light-tasting dessert or afternoon snack with a cup of tea or coffee.

Ingredients

  • 2 egg whites
  • ½ tsp baking powder
  • 3 tbsp all-purpose flour (you can substitute a gluten-free all-purpose flour)
  • 2 tbsp granulated sugar

Instructions

  1. Mix the egg whites up with a fork (you can do this right in the mug you're using).
  2. Add the sugar and stir in.
  3. Stir in the flour and baking soda.
  4. Microwave for 60 seconds; if it needs more time, add 15 seconds at a time until done.
  5. Top with whipped cream and sprinkles, or strawberries, or eat as is!
