Butterscotch Mug Cake with Pecans
Ooh, this pecan butterscotch mug cake is SO good!
It is a very dessert-like mug cake, totally delicious and rich and decadent. It has the vibe of your favorite Thanksgiving Pecan Pie, in a dessert that takes less than 5 minutes to make.
This tasty little number doesn’t try to pretend it could be breakfast, like this almond flour mug cake, healthy banana bread mug cake, or blueberry muffin in a mug.
It proudly stands for what it is: sweet, delicious, nostalgic and homey.
(Though I totally have had cake for breakfast, and believe it should be mandatory on your birthday.)

Butterscotch vs Caramel
About the sweet creamy butterscotch in this mug cake recipe…we will NOT be making this from scratch.
I am (lots of the time) a very scratch baker – that was really important to me when I owned my organic bakery.
What is also important to me is not being ridiculous about making everything from scratch.
We are making a 2-minute butterscotch mug cake; it’s ALL about the simplicity. We won’t be adding on a sugar-caramelization-candy-thermometer step.
This is my favorite butterscotch sauce – I love the flavor!
So what is the difference between butterscotch vs caramel?
Butterscotch uses butter and brown sugar to make the sweet amber treat.
Caramel is made by slow cooking white sugar (no butter) until it reaches a certain temperature and magically (or, like, science) gets thicker and darker and voila it’s caramel!
If you don’t have butterscotch sauce or butterscotch syrup on hand, you can totally sub caramel sauce (I use this one on my ice cream and drizzled in hot chocolate!)
Butterscotch Mug Cake Tips
If you don’t like pecans, you can sub another nut. Hazelnuts would be a delicious choice.
If you’re allergic to nuts, this recipe will still be super delish as a butterscotch mug cake.
You can use a sugar-free butterscotch (or caramel) syrup instead of the regular butterscotch sauce (use 1:1).
Substitute a gluten-free all-purpose flour mix (like this one) for the regular flour (1:1).
This butterscotch pecan mug cake is egg-free and can be dairy-free if you use a dairy-free butterscotch sauce or caramel sauce.
For the cooking time – this can vary with different microwaves and also with different mug sizes. It took my microwave 60 seconds to cook perfectly. The first time you make this mug bread, watch your microwave.
Test doneness, and if it needs a bit more time, add on 15 seconds at a time until it’s fully cooked. The next time you make it, you’ll know exactly how long it takes in your microwave!

Pecan Butterscotch Mug Cake (vegan)
This pecan butterscotch mug cake is like having your favorite pecan pie, without any pie crust making. Sweet butterscotch and crunchy pecans will make this 1-minute mug cake your new favorite quick snack!
Ingredients
- 4 tbsp regular flour or whole wheat flour, or gluten-free all-purpose flour mix
- 2 tbsp butterscotch sauce
- 1 ½ tbsp melted butter or oil (or coconut oil, any oil works)(vegan butter)
- 1 tbsp milk any kind
- 2 tbsp chopped or whole pecans
- ½ tsp baking powder
Instructions
1. Mix the flour and baking powder in a small bowl.
2. Stir in the milk, butterscotch sauce, and the melted butter (or oil).
3. Pour the batter into a sprayed microwave-safe mug.
4. Top with chopped or whole pecans.
5. Microwave on high for 60 seconds to 2 minutes depending on your microwave.
6. Check for doneness at 60 seconds and add time if you need to.
7. Top with a drizzle of butterscotch sauce if you wish, and enjoy your mug of deliciousness - you deserve it!
