This almond flour mug cake is almost too good to be true! It’s gluten-free, keto, paleo, high protein, and completely addictive! It’s healthy enough you can have it for breakfast! This almond flour cake is going to be a regular addition in our house. I hope you love it as much as we do!

Almond flour mug cake ingredients (almond flour, coconut oil, vanilla, chocolate chunks, an egg)

You’re only a few ingredients away from a quick and yummy low-carb breakfast or treat!

almond flour (I like this almond flour for baking)

coconut oil (or butter)

granulated sugar (or monk fruit or granulated stevia)

vanilla extract (this pure vanilla extract is a great price)

dark chocolate chunks or chips (use these for a keto version)

an egg

baking powder

Mug Cake Baking Tips

For the cooking time – this can vary with different microwaves and also with different mug sizes. It took my microwave 60 seconds to cook perfectly. The first time you make this mug bread, watch your microwave.

Test doneness, and if it needs a bit more time, add on 15 seconds at a time until it’s fully cooked. The next time you make it, you’ll know exactly how long it takes in your microwave!

To keep this mug cake recipe keto, use monk fruit or granulated stevia for the sweetener. If it doesn’t need to be keto for you, use any granulated sugar you like!

You can substitute regular flour for almond flour if that’s what you have. It won’t exactly be an almond flour mug cake anymore (!) but it will still be delicious. Just watch the microwave as it might take a bit more time to cook.

Almond Flour Mug Cake – Healthy, Gluten-Free, and Totally Delicious

Yield: 1 serving
Prep Time: 2 minutes
Cook Time: 1 minute
Total Time: 3 minutes

Ingredients

  • 4 tbsp almond flour
  • 1 tbsp melted coconut oil
  • 1 tbsp monk fruit (or 1 tbsp granulated sugar or ½ tbsp granulated stevia)
  • 1 tbsp of dark chocolate chunks or chips; add more if you feel like it!
  • 1 egg
  • ½ tsp baking powder
  • ½ tsp vanilla extract

Instructions

    1.Beat the egg in your chosen mug; you can also use a medium ramekin.
    2.Add coconut oil, monk fruit, vanilla extract and baking powder and stir.
    3.Add almond flour and whisk to break any clumps.
    4.Add chocolate chips or chocolate chunks; combine them in the batter or sprinkle them on top of the cake.
    5.Microwave for 60 seconds on high, then check it.

    6. The almond flour mug cake should be cooked but not overcooked as it could end up not being soft enough. If it is too wet, cook it for another 30 seconds.
    7.Devour immediately!

Notes

●    Replace coconut oil with butter if you feel like it. Just soften it before using it.

●    Sub chocolate chips for a tablespoon of peanut butter for even more protein. Or keep the chocolate chips and add the peanut butter.

●    Using blueberries is also a great choice as it provides moisture to the cake. Blueberries also add healthy alternative rich in antioxidants! Plus they are totally yum.

      Hi Carmen! Yes you can. If you want to do this I would definitely spray the mug before adding the almond flour mug cake batter. Then run your knife around the edge to loosen once it’s cooked.
