This ensures an even distribution of the baking powder, sugar, and cocoa. Cocoa powder can be clumpy and mixing it in with the granulated sugar can help break down any clumps.
  3. Choose the Right Mug: Use a microwave-safe mug that’s at least 12 ounces to prevent the batter from overflowing while cooking. I also like to divide the batter into two ramekins to make two mini mug cakes (one for me, one for my daughter!)

  • 2 tablespoons white flour
  • 2 tablespoons cocoa powder
  • 2 tablespoons granulated sugar: plain white, date sugar, coconut sugar, erythritol, etc.
  • 2 tablespoons milk, any kind you like
  • ½ tablespoon melted butter or coconut oil (or other oil)
  • 1/2 teaspoon baking powder
  • 2 pinches salt
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chocolate chips

Instructions

1. In a small bowl mix together the flour, cocoa powder, baking powder, sugar, and pinch of salt.

2. Add in the melted butter or oil, vanilla extract, and milk, and stir until mixed.

3. Stir in the chocolate chips.

4. Spray your mug with cooking spray and pour in the batter.

5. Microwave for 1 minute.

6. My mug cake was perfectly done at 1 minute; if yours needs a bit more time, add 15 seconds at a time and watch it.
