This microwave mug cake recipe is naturally gluten-free and high-protein since I used my favorite flour – almond flour.
I love small batch desserts. No waiting around for a long cooking time, so you get to satisfy your sweet tooth fast.
Plus, if you have a hard time stopping at just one slice, or just half the bag, microwave cakes are ideal because there are no tempting leftovers.
I can’t imagine stopping at just one slice of this mocha mug cake if it was an entire cake…

Mocha Mug Cake Ingredients
Here’s what you need to make this easy chocolate dessert:
- almond flour
- cocoa powder
- melted butter or coconut oil
- brown sugar (or other granulated sugar)
- an egg
- heavy cream (or milk, or any kind of non-dairy milk)
- instant coffee powder
- baking powder
- splash of vanilla extract
- pinch of salt
- Optional: 1-2 tablespoons chocolate chips or chocolate chunks
Mix the wet ingredients right in the bottom of the mug, or in a small bowl.
Add the dry ingredients and stir together.
Top with extra chocolate chips or chocolate chunks if you want (I always want), and microwave on high power for 1-2 minutes or until cooked through.

Tips for Making the Best Mocha Mug Cake
For the coffee flavor, you can use espresso powder or instant coffee.
Using brewed coffee won’t give a strong enough coffee flavor, so you want to use the finely ground coffee for this caffè mocha mug cake.
Coconut flour won’t work for this recipe but let me know in the comments if you’d like to see a coconut flour mug cake recipe.
Oat flour will work instead of the almond flour if you need a nut-free mug cake. It will have a different texture and less protein but will still be delicious!
You can also use whole wheat flour or white flour if that’s what you have on hand and you don’t need it to be a gluten-free dessert.
You can use coconut milk or soy milk instead of the cream in this recipe (or any milk you like – dairy or non-dairy).
For sweetener, I love using brown sugar or coconut sugar. The latter doesn’t taste like coconut, but both give a rich flavor to this delicious recipe.
You can use any kind of granulated sweetener: white, date, monk fruit, erythritol, etc.

This yummy mocha mug cake is the perfect mix of chocolate and coffee. It's a two-minute sweet treat that you can enjoy with your cup of coffee. It's also surprisingly healthy: gluten-free and high-protein.
Ingredients
- 3 tbsp almond flour
- 1 tbsp cocoa powder
- 1 tbsp melted butter or coconut oil
- 2 tbsp brown sugar
- 1 egg
- 1 tablespoons heavy cream
- ½ tsp instant coffee powder
- ½ tsp baking powder
- Splash of vanilla extract (~1/8 tsp)
- Pinch of salt
- Optional: 1-2 tablespoons chocolate chips
Instructions
- Stir the sugar into the melted butter in a bowl (or right into your mug).
- Mix in the almond flour, cocoa powder, instant coffee, and pinch of salt.
- Crack the egg in and mix it in.
- Stir in the cream or milk and vanilla.
- Add the baking powder and stir.
- Stir in the chocolate chips if you are using them.
- Microwave on high for 1 minute; add 15 seconds at a time if it needs more time to be fully cooked.
- Top with whipped cream or vanilla ice cream, or enjoy as is.
