Gingerbread Mug Cake

This gingerbread mug cake has all the cozy spices of the best gingerbread cake. Cinnamon, ginger, molasses, all in a single-serving dessert! No tempting leftovers and this gingerbread mug cake recipe only takes 3 minutes to make. An easy microwave snack, dessert, or even breakfast!

Ingredients
  

  • 4 tbsp flour all-purpose, whole wheat, gluten-free all-purpose
  • 2 tbsp sugar brown sugar, white sugar, erythritol, coconut sugar
  • 1/2 tsp baking powder
  • 1 ½ tbsp melted butter or oil
  • 2 tbsp milk any kind
  • 1 tbsp molasses
  • ¼ tsp ground ginger
  • ¼ tsp cinnamon
  • 1 pinch cloves optional

Instructions
 

  • Stir the flour, sugar, baking powder, ginger, cinnamon, and pinch of cloves in a small bowl.
  • Pour in the molasses, melted butter, and milk.
  • Stir everything together.
  • Spray a mug with non-stick spray and pour in the gingerbread cake batter.
  • Microwave for 1 minute and check if done.
  • If not quite done, microwave by 15 seconds at a time until cooked.
  • If you'd like, top with powdered sugar or whipped cream; enjoy!!
