As soon as Halloween is over and I’ve had my fair share (and other people’s shares too) of pumpkin mug cakes, I start thinking about gingerbread desserts.

Although I break the rules about wearing white after Labor Day, and I will gladly eat pumpkin desserts year-round, I reserve gingerbread baking for cooler days.

Our small kitchen is churning out gingerbread cookies, gingerbread loaves, homemade gingerbread lattes, and gingerbread scones on the regular now.

I have had the idea of a yummy gingerbread mug cake recipe since the summer, but I needed to wait until the weather turned to try it out 🙂

And I can’t believe it but it turned out perfectly on the first try! Food blogger nirvana!! This does not normally happen (see my chai mug cake recipe that I almost gave up on) so when it does I do a happy dance. Then I make it again juuuuust to make sure it’s super delicious (not because I want cake again, swear).

Single Serving Gingerbread Cake Substitutions

You can use a gluten-free all-purpose flour mix (like this one) instead of the regular flour in this mug cake recipe. Coconut flour will not work as a sub in this recipe; I haven’t tried with almond flour. Almond flour might work, but you might need to adjust the microwave time a little. You can also try these almond flour mug cake recipes.

This gingerbread mug cake is naturally egg-free, and if you use a milk like oat milk, almond milk, or coconut milk, it will be a vegan mug cake too.

There is no good sub for the molasses – it’s the iconic ingredient in gingerbread cake.

Gingerbread Mug Cake Tips

For the cooking time – this can vary with different microwaves and also with different mug sizes. It took my microwave 60 seconds to cook perfectly. The first time you make this mug bread, watch your microwave.

Test doneness, and if it needs a bit more time, add on 15 seconds at a time until it’s fully cooked. The next time you make it, you’ll know exactly how long it takes in your microwave!

Ingredients
  

  • 4 tbsp flour all-purpose, whole wheat, gluten-free all-purpose
  • 2 tbsp sugar brown sugar, white sugar, erythritol, coconut sugar
  • 1/2 tsp baking powder
  • 1 ½ tbsp melted butter or oil
  • 2 tbsp milk any kind
  • 1 tbsp molasses
  • ¼ tsp ground ginger
  • ¼ tsp cinnamon
  • 1 pinch cloves optional

Instructions
 

  • Stir the flour, sugar, baking powder, ginger, cinnamon, and pinch of cloves in a small bowl.
  • Pour in the molasses, melted butter, and milk.
  • Stir everything together.
  • Spray a mug with non-stick spray and pour in the gingerbread cake batter.
  • Microwave for 1 minute and check if done.
  • If not quite done, microwave by 15 seconds at a time until cooked.
  • If you'd like, top with powdered sugar or whipped cream; enjoy!!

  7. O, M, G…..I just made this recipe and it turned out DELICIOUS. I had been craving soft molasses cookies, but gingerbread would do. As I am by myself, this one serving will assuage the craving until the next time. I followed the recipe exactly (except I added 1 packet of True Orange, I did need to add 2 15 sec cycles, and ate warm Gingerbread with whipped cream. Thank you for this recipe. Saved to my Pocket and will definitely be used again!
