Blueberry Muffin in a Mug

There’s almost nothing yummier than a fresh-out-of-the-oven blueberry muffin! This blueberry muffin in a mug is even better because it only takes 2 minutes to bake and you won’t have all those dishes to wash! Perfect for a quick breakfast, easy snack, or even a healthy dessert!

Ingredients
  

  • 4 tbsp regular flour or whole wheat flour, or gluten-free all-purpose flour mix
  • 2 tbsp sugar any granulated sugar, white, coconut sugar, erythritol, etc.
  • 1 ½ tbsp melted butter or oil (or coconut oil, any oil works)(vegan butter)
  • 3 tbsp milk any kind
  • ½ tsp baking powder
  • ¼ tsp pure vanilla extract
  • ¼ cup blueberries fresh (or defrosted if frozen)

Instructions
 

  • Mix the flour, sugar, and baking powder in a small bowl.
  • Stir in the milk and vanilla extract, then stir in the melted butter.
  • Mix in the fresh blueberries.
  • Spray a mug with non-stick spray.
  • Pour in the mug muffin batter; adding a few extra blueberries to the top if you like (I like).
  • Microwave for 90 seconds then check to see if it's done.
  • If not, add 15 seconds at a time until cooked through.
  • Top with more blueberries (you can never have too many blueberries!) and enjoy!!
