Easy Chai Cake Recipe

I’ll admit, this chai mug cake recipe almost had me foiled.

I have been developing recipes for many years, first starting with my local organic bakery, and then through my blogs.

It’s not that all my recipes turn out perfectly on the first try. Once in a while they do (like this microwave banana bread mug cake) – and those days are awesome and I can just relax with whatever treat I have just baked. Shared with my 4-year-old, which means she eats most of it.

But this chai mug cake…

Whew!

I made it no fewer than 6 7 different times. (On the other hand, this funfetti mug cake turned out perfectly on the first try!)

I only like to share recipes that I absolutely love, and that I know are “sellable” (from my years at the bakery).

It took so many different tries for me to get this chai spice mug cake super delicious, but I finally did and now I’m extra excited to share it with you!

Ingredients You Need for This Chai Spice Mug Cake

They are all really simple ingredients and you only need a few!

  • all-purpose flour
  • milk
  • baking powder
  • sugar
  • chai tea bag
  • oil or butter

Tips on Making This Chai Mug Cake

To make this a gluten-free chai mug cake, substitute the all-purpose flour 1:1 with a gluten-free flour mix.

This chai mug cake is vegan if you use non-dairy milk, and oil. No subs needed! Another cozy recipe you have to try (also vegan-friendly) is this gingerbread mug cake. 😍

For the cooking time – this can vary with different microwaves and also with different mug sizes. It took my microwave 60 seconds to cook perfectly. The first time you make this mug bread, watch your microwave.

Test doneness, and if it needs a bit more time, add on 15 seconds at a time until it’s fully cooked. The next time you make it, you’ll know exactly how long it takes in your microwave!

I like to top this mug cake in different ways. It’s totally delicious the way it is, so I eat it like that often (usually with a side of chai tea or even a chai latte!) Sometimes I sprinkle cinnamon sugar on top for a bit of crunch. Other times (when I have a couple extra minutes) I froth some milk and top the mug cake with warm steamed milk. It’s totally decadent and comforting and worth the extra step when you have the time.

Ingredients
  

  • 4 tbsp all-purpose flour
  • 2 tbsp sugar any kind: brown, coconut, erythritol for sugar-free
  • ½ tsp baking powder
  • 1 ½ tbsp oil or melted butter I used olive oil, any oil works
  • 3 tbsp milk any kind
  • 1 chai tea bag

Instructions
 

  • Measure 3 tablespoons of milk into a cup and microwave for about 20 seconds until warm.
  • Put the chai tea bag into the warm milk and put aside to steep while you get the rest of the chai mug cake ready.
  • Measure out the flour, sugar, and baking powder in a small bowl.
  • Add the oil and mix in.
  • Squeeze out the tea bag into the milk, and pour the chai milk into the bowl with the other ingredients.
  • Mix everything together.
  • Spray a mug or ramekin, and pour in the chai cake batter.
  • Microwave for 60 seconds; check and if it needs more time, add 15 seconds at a time until cooked.
  • Enjoy this chai spice mug cake with a side of chai tea or a chai latte!
