The Best Honey Mug Cake

Last week I was at a local farm with my daughter.

We picked up some local wildflower honey in a pretty glass container and I started thinking of all the yummy new recipes I could make with honey.

This honey mug cake is the first and it is so good!!

The honey makes this microwave mug cake similar to a sponge cake.

After trying different variations of a honey mug cake, this is by far my favorite.

It doesn’t have any extra sweeteners like brown sugar in addition to the honey like I have seen in other recipes.

It’s sweetened with pure honey.

It is also made with almond flour, so it’s naturally gluten-free, grain-free, and high-protein!

It’s a fun dessert any time of the year.

You can use any type of honey you have: clover honey, creamed honey, manuka honey, etc.

It only takes 5 ingredients to make this yummy honey cake:

  • almond flour
  • butter
  • honey
  • egg
  • baking powder

Tips for Making the Best Honey Cake in a Mug

Because of the honey, this is definitely a moist cake. Especially the first time you make this cozy honey mug cake, put your microwave-safe mug on top of a plate to catch any overflow.

The first time I made it, I wasn’t watching the microwave and this happened:

Different microwaves have different power (and it will depend on your mug too), so watch the first time you make it and start with 1 minute.

If you’re using a small mug or ramekin, you can always divide the cake batter into a second mug.

If your honey is very liquidy, stir it right into your melted butter.

But if you are using creamed honey, or your honey is more solid, you can microwave it with the butter for 10-20 seconds so they are easy to mix together.

Then add the dry ingredients into the wet ingredients, stir, and microwave.

Honey Mug Cake Variations

If you don’t have almond flour or have a nut allergy, you can substitute the almond flour with all-purpose flour. Use the same amount as the almond flour (4 tablespoons).

Because all purpose flour absorbs liquid more than almond flour, the cook time might be a little shorter.

Start with 1 minute and add time if needed.

You can also substitute with oat flour for another variation.

A gluten-free flour blend (like this one) will also work if you want a gluten-free and nut-free mug cake.

This honey mug cake recipe doesn’t work well with coconut flour, so I wouldn’t recommend that.

I also don’t recommend that you substitute the honey with maple syrup or white sugar or any other kind of sweetener.

The whole point of this recipe is that it’s a honey mug cake, so the honey is pretty necessary!

For other almond flour mug cake recipes, try these.

You can add a pinch of salt to temper some of the sweetness.

If you want, you can add a dash of vanilla extract (I preferred without so the pure honey flavor shines through).

You can use coconut oil instead of butter, or any dairy-free butter substitute.

Add your favorite toppings, like chocolate chips, fresh berries, or a scoop of vanilla ice cream. You can even top with an extra drizzle of honey for a good time.

Honey Mug Cake

Yield: 1 serving
Prep Time: 1 minute
Cook Time: 2 minutes

This honey mug cake is an easy sweet treat ready in 2 minutes. Made with almond flour, it's gluten-free and high-protein too!

Ingredients

  • 4 tbsp almond flour
  • 1 tbsp melted butter
  • 2 tbsp liquid honey
  • 1 egg
  • ½ tsp Baking powder

Instructions

    1. Melt butter and honey together in a small bowl.

    2. Add in the almond flour and baking powder.

    3. Stir in the egg.

    4. Pour into a microwave-safe mug or ramekin and put a plate under it to catch any spills.

    5. Cook it in the microwave for 60 seconds on high powder, then check it.

    6. If your honey mug cake is not fully cooked, add another 30-60 seconds (my microwave/mug needed 2 minutes total).

    7. Enjoy immediately; mug cakes are best fresh!

    8. Keep any leftovers in the fridge inside an airtight container for up to 3 days.
