Oatmeal Cookie Mug Cake

When I owned a bakery, our second most popular cookie was an oatmeal raisin cookie.

Soft and chewy, with whole rolled oats, sweet cinnamon, and juicy raisins, our customers loved it.

Our oatmeal raisin cookie was even more popular than the classic chocolate chip cookie.

Single Serving Oatmeal Cookie Ingredients

This is what you need to make a yummy oatmeal mug cookie:

  • an egg yolk  
  • granulated sugar 
  • butter 
  • flour 
  • rolled oats 
  • raisins (thompson, sultana, golden, any kind is good)
  • baking soda 
  • sea salt (or any kind of salt you like) 
  • cinnamon 

Instead of the rolled oats, you can use steel-cut oats or even quick oats if that’s what you have on hand.

For the granulated sugar, I found brown sugar to be the tastiest for this mug cake recipe, but other kinds of sugar are good too.

You can use white sugar, date sugar, coconut sugar, erythritol, monk fruit, etc. as long as it’s granulated and not a liquid sugar.

For the flour, you can use regular white flour, unbleached flour, whole wheat flour. Almond flour and coconut flour won’t work the best in this recipe (I have lots of almond flour recipes here).

Oatmeal Raisin Cookie in a Mug Tips & Subs

You’ll use just an egg yolk for this single oatmeal raisin cookie. Using the whole egg would give it too much liquid and it wouldn’t set well.

If you want to use liquid egg whites instead of the egg yolk, substitute with 1 tablespoon of egg whites.

Gluten-Free Oatmeal Raisin Cookie in a Mug

To make this quick oatmeal raisin cookie gluten-free, you just need to sub two things. Make sure the oats that you’re using are gluten-free (these ones are!).

And then for the flour, use a gluten-free flour mix (this one works well but you can use any gf flour you like.)

Vegan Oatmeal Raisin Cookie for One

For a vegan version of this mug cookie, use softened coconut oil or vegan butter instead of the butter. Use an egg replacer for the egg yolk. You can either use this egg replacer powder or a chia egg.

If you want to use a chia egg, mix 2 teaspoons of chia seeds with 1 tablespoon of water. Let sit for a couple minutes so the chia seeds swell and provide the binding egg-like properties. Then you’re ready to go with the rest of the recipe!

Ingredients

  • 1 egg yolk
  • 1 tbsp brown sugar
  • 1 tbsp softened butter
  • 2 1/2 tbsp flour
  • 1 tbsp rolled oats
  • 1-2 tbsp raisins
  • Pinch of baking soda
  • Pinch of sea salt
  • 2 pinches cinnamon

Instructions

1. Mix together in a small bowl the softened butter and the sugar until creamy. 

2. Stir in the egg yolk, sea salt, cinnamon, and baking soda. 

3. Add the flour, oats, and raisins and stir until it comes together. 

4. Put the oatmeal cookie dough into an ungreased mug (these are my favorite mugs). 

5. Microwave for 45 seconds on high and check for doneness. 

6. If it needs a bit more time (you want it gooey but not raw), add 15 second increments until done (mine took 60 seconds total). 

7. Dig in or top with vanilla ice cream!
