Keto Snickerdoodle Mug Cake
When I ran my organic bakery, one of our most popular cookies was our cinnamon sugar cookie, aka the snickerdoodle cookie.
Since this site is a fan page for mug cakes, I changed that recipe to a snickerdoodle mug cake. Sweet and cozy spices are yummy for anytime, but especially when the weather is cooler with a favorite hot drink.

Cinnamon Mug Cake Tips and Subs
This cinnamon sugar mug cake is made with almond flour – probably my ultimate all-time fave flour to bake with. It’s high protein and has SO much yummy flavor (and doesn’t taste like you’re munching on a handful of almonds).

If you are allergic to nuts or don’t have almond flour on you (you can order almond flour here), and you are not following a keto diet, you can use a regular all-purpose flour. Sub 1 for 1. It will have a different consistency and be lower in protein but will still have the yummy snickerdoodle taste.

A note on sweetness: the recipe calls for between 1 and 2 tablespoons of sweetener. That could be monk fruit if you’re eating keto, or coconut sugar, date sugar, or regular white or brown sugar if you’re not. Most people will probably like the taste with the 2 tablespoons. I like baked goods less sweet so I prefer with only 1 tablespoon. Both ways are really tasty, only you know how big a sweet tooth you have. 😉

For the cooking time – this can vary with different microwaves and also with different mug sizes. It took my microwave 60 seconds to cook perfectly. The first time you make this mug bread, watch your microwave.
Test doneness, and if it needs a bit more time, add on 15 seconds at a time until it’s fully cooked. The next time you make it, you’ll know exactly how long it takes in your microwave!

Snickerdoodle Mug Cake (keto-friendly/gluten-free)
You will fall for this sweet cinnamon sugar snickerdoodle mug cake! Sweet and cozy spices are yummy for anytime, but especially when the weather is cooler with a favorite hot drink. It takes 1 minute in the microwave, and is keto, low-carb, gluten-free, and crazy delicious!
Ingredients
- 4 tbsp almond flour
- 1 tbsp coconut oil
- 1-2 tbsp monk fruit (or 1-2 tbsp granulated sugar or 1 tbsp granulated stevia)
- ½ tsp vanilla extract
- 1 egg
- ½ tsp baking powder
- ¼ tsp cinnamon
- Topping: ¼ tsp cinnamon + ½ tbsp monk fruit (or ½ tbsp granulated sugar)
Instructions
1. Beat the egg in your chosen mug or ramekin.
2. Add coconut oil, sugar or sugar substitute, vanilla extract, cinnamon, and baking powder; stir to combine.
3. Add almond flour and whisk to break any clumps.
4. Cook it in the microwave for 60 seconds in high powder, then check it.
5. It should be cooked but not overcooked as it could end up not being soft enough.
6. If it is too wet, cook it for another 30 seconds (this is what I need to do, but I know that all microwaves are different, and the mug could impact the cooking itself).
7. Sprinkle with the cinnamon sugar mixture.
8. Enjoy right away, yo!; these cakes are the yummiest while fresh.
9. You can eat this snickerdoodle mug cake straight up, or top with whipped cream, coconut whipped cream, or ice cream!
10. Keep any leftovers in the fridge inside an airtight container for up to 3 days.
Notes
Replace coconut oil with butter if you feel like it. Just soften it before using it.
