It’s so quick to make, is rich and chocolatey, and your non-vegan friends will like it too. Top with extra chocolate chips, coconut whipped cream, or chocolate sprinkles (because life is better with sprinkles!).

Vegan Mug Brownie Recipe

Lately my treat of choice when I go to coffeeshops to work has been a brownie.

Some people are very brownie-particular.

Like brownies shouldn’t have nuts, they should have nuts, with frosting, without frosting, fudgey, cake-like.

But just give me all the brownies.

Cookies I am more particular about – they need to have chocolate chips in them, no matter what the cookie.

(Try this chocolate chip cookie in a mug when you’re craving fresh cookies but don’t want to bake a whole batch.)

But I will take a brownie bar of chocolatey deliciousness in any form.

Mug Brownie without Egg: Ingredients

For this vegan mug brownie recipe, you’ll need:

  • all-purpose flour
  • granulated sugar
  • cocoa powder
  • vegan mini chocolate chips (these ones are delicious)
  • vegan milk of your choice (I used almond milk, but soy, oat, rice, etc. all work)
  • vegetable oil
  • pure vanilla extract
  • baking powder
  • salt

Instead of the vegan mini chocolate chips, you could use regular vegan chocolate chips, vegan chocolate chunks, or chop up your favorite vegan chocolate bar and use that.

I love this brand of vegan chocolate, and if you use this one in particular, you’ll have a vegan mint chocolate brownie mug cake!

This microwave vegan brownie took me 1 minute 45 seconds to cook perfectly.

Your mug and microwave combo will be different than mine, so you can start with 90 seconds and add 15 seconds at a time until done.

Vegan Brownie in a Mug

Yield: 1 serving
Prep Time: 2 minutes
Cook Time: 2 minutes

Just a few ingredients and a couple minutes, and you'll have this delicious vegan mug brownie! Treat yourself to a single serving vegan brownie in a mug and satisfy your chocolate cravings.

Ingredients

  • 3 tbsp all-purpose flour
  • 2 tbsp granulated sugar (cane, date, coconut, monk fruit, etc.)
  • 1 tbsp cocoa powder
  • 1 tbsp vegan mini chocolate chips
  • 1 tbsp vegan milk of your choice
  • 1 tbsp vegetable oil
  • ½ tsp pure vanilla extract
  • ¼ tsp baking powder
  • ¼ tsp salt

Instructions

    1. In a 8 to 12 oz mug, add the dry ingredients; all-purpose flour, cocoa powder, baking powder, salt and sugar.

    2. Mix until well combined.

    3. Then add the wet ingredients: milk, oil, vanilla extract.

    4. Mix until well combined.

    5. Add the chocolate chips on top.

    6. Put in the microwave for 1 minute and 45 seconds, or add a few more seconds, if it still has lots of wetness.

    7. Let it cool off for at least one minute.

    8. Garnish with a little confectioners sugar, optional.
