Mug Coffee Cake

Hey! Coffee mug cake doesn’t have coffee in it.

I know!

I didn’t know what to call this mug cake recipe at first – coffee cake mug cake? Mug coffee cake? I decided on coffee mug cake, but this is a cake you can have with your coffee, it doesn’t supply your coffee.

I made this coffee cake with almond flour to make it a healthy mug cake and I assumed it would taste…delicious of course! But also kind of healthy.

It doesn’t! And I mean that in a totally good way. I was surprised at how decadent, delicious, and regular-tasting this mug cake turned out.

Non-healthy-foods people would love this mug cake too (like my dad).

When do you have coffee cake? I have had it for breakfast, a snack, or dessert, so those would all be good times to have this healthy single serving treat. I probably wouldn’t have it for dinner, but you do you.

Easy Coffee Mug Cake Ingredients

This healthy treat has three parts to it:

  • the cake batter
  • cinnamon streusel topping
  • icing sugar drizzle (and yup there is a keto version of this too)

Don’t let the three steps intimidate you. This recipe takes literally a couple minutes to throw together.

I mix the cake batter right into a mug (these are my favorite mugs!), I don’t even spray the mug, and it turns out perfectly.

Here are the coffeecake batter ingredients:

  • almond flour
  • coconut oil (or butter)
  • granulated sugar (or monk fruit/granulated stevia/erythritol)
  • vanilla extract
  • an egg
  • baking powder
  • cinnamon

Eggless coffee mug cake

To make a vegan version of this recipe, use coconut oil or vegan butter instead of butter.

Instead of the egg, the best egg replacer I have found for these mug cake recipes are chia seeds.

The texture will not be identical to the mug cake with an egg, but it will still be delicious.

Use 1 tablespoon of chia seeds plus 1 tablespoon water instead of the egg. Let the batter sit for a couple of minutes before microwaving. This helps the chia seeds absorb water and swell up, which means a fluffier texture mug cake!

Keto Coffeecake in a Mug

To keep this mug cake low carb and keto, use the following ingredients:

The easy way of making a keto-friendly icing sugar is by picking up some already made powdered erythritol like this.

You can also make your own keto icing sugar by taking whatever granulated keto sweetener you have, and pulsing it in a food processor until it’s a powdered sugar consistency.

This coffee mug cake is literally a single-serving coffee cake in a mug! It takes two minutes to make, is gluten-free and high protein and it can be keto and low-carb too!

Ingredients

Coffee Cake

  • 4 Tbsp almond flour
  • 1 Tbsp granulated sugar (white sugar, coconut sugar, erythritol, monk fruit, etc.)
  • 1 Tbsp coconut oil or butter
  • 1 egg
  • 1/8 tsp vanilla extract
  • 1/8 tsp cinnamon
  • 1/2 tsp baking powder

Streusel Topping

  • 1 Tbsp almond flour
  • 1 Tbsp coconut oil or butter
  • 1/2 Tbsp granulated sugar (white, coconut sugar, erythritol, etc.)
  • 1/8 Tsp cinnamon

Drizzle

  • 2 Tbsp icing sugar or powdered erythritol for a keto version
  • A few drops of water

Instructions

1. Beat the egg in your chosen mug (you could also use a medium ramekin).

2. Add melted coconut oil or butter, sugar or sugar substitute, vanilla extract, cinnamon, and baking powder; stir to combine.

3. Add almond flour and whisk to break any clumps.

4. Make the streusel: use a fork to mash together the coconut oil (or butter), almond flour, sugar, and cinnamon.

5. Sprinkle the mug cake batter with the streusel mixture.

6. Cook it in the microwave for 60 seconds in high powder, then check it.

7. It should be cooked but not overcooked as it could end up not being soft enough.

8. If it is too wet, cook it for another 30 seconds (this is what I need to do, but all microwaves are different, and the mug could impact the cooking time too).

9. Mix icing sugar or powdered erythritol with a few drops of water, then drizzle over the mug cake.

10. Enjoy right away! These cakes are the yummiest while fresh.

11. Keep any leftovers in the fridge inside an airtight container for up to 3 days (but it won’t last that long!).

Notes

Replace coconut oil with butter if you feel like it. Just soften it before using it.
