I made this strawberry shortcake mug cake recipe super easy by making it a mix-only recipe.
No pastry cutter required, no cutting in the butter. We’ll use melted butter as a shortcut and it turns out beautifully – just check that out:

- melted butter
- sugar
- flour
- vanilla
- milk
- baking powder

- chopped strawberries
- whipped cream

Keto Strawberry Shortcake Mug Cake
To make a keto strawberry shortcake mug cake, there is a simple substitution.
Use this mug cake recipe to make the shortbread biscuit. Cut it in half and top with whipped cream and strawberries.
You can even add powdered erythritol to the top or mixed in with the whipped cream if you want your keto strawberry shortcake a little sweeter.
Yes this keto strawberry mug cake will taste different than the original version made with regular wheat flour.
The keto version uses almond flour which doesn’t fluff up the same, but will still be super delicious and will taste like a keto strawberry shortcake when you add the strawberries and whipped cream. Yum!!
Other Strawberry Shortcake Variations
To make a vegan strawberry shortcake in a mug, there are a couple subs to do. Use any non-dairy milk you like, use vegan butter or oil, and for the whipped cream you can use coconut whipped cream.
To make a gluten-free version of this recipe, simply sub gluten-free all-purpose flour for the regular flour in the recipe.
Strawberry Shortcake Mug Cake
This strawberry shortcake mug cake looks impressive but is a really easy dessert to whip up. With fresh strawberries and whipped cream in between a sweet biscuit, I bet this'll become one of your new favorite desserts. It's ready in minutes, and there are gluten-free and vegan strawberry shortcake options too!
Ingredients
- 1 tbsp melted butter (or oil or melted vegan butter)
- 1 tbsp granulated sugar (white sugar, erythritol, coconut sugar, etc.)
- ¼ cup flour (or gluten-free all-purpose flour)
- ¼ tsp vanilla
- 2 tbsp milk, any kind
- ½ tsp baking powder
- Pinch salt
- ¼ to ½ cup chopped strawberries
- Whipped cream (or coconut whipped cream)
Instructions
- Melt butter right into the mug you'll be using for your strawberry shortcake.
- Add sugar, vanilla, milk, and a pinch of salt.
- Stir in the flour until smooth, and level the top of the batter a bit.
- Microwave on high for 90 seconds; if it needs more time, add 15 seconds increments until done.
- Let the shortcake cool for a couple minutes; while you're waiting, chop the strawberries and get the whipped cream ready.
- Slice the shortcake in half, top with lots of whipped cream and berries, and dig in!

I just buy those dessert shells at the market, put in cut-up strawberries, and use real whipped cream from the can. Best strawberry shortcake and very easy!
Agree the store sponge cakes are easy and even taste good but they cannot be eaten by the gluten intolerant or those with Celiac disease. With this recipe, one can sub with gluten free flour.
