This healthy pumpkin mug cake only takes 2 minutes to make in the microwave.  It’s an easy and flourless pumpkin mug cake that is paleo and gluten-free!  A yummy pumpkin treat for breakfast, a snack, or a healthy dessert. 

    

It’s Pumpkin Mug Muffin Time!

Well, it’s now-o-clock, when the mornings start to feel just a teeny bit cooler, all the way until the snow falls.

Though I eat pumpkin cake year round, it’s particularly seasonal right now.

Healthy Pumpkin Cake – Single Serving

If you hadn’t noticed, I love mug cakes (another current fave – this gingerbread mug cake). And from the number of saves and shares on my other mug cake recipes, I see I’m not alone!  (P.S. Thank you so much for saving and sharing and trying my recipes – it means a lot to me!)

If you’re short on time and you want a yummy baked thing, they are so perfect.  I love baking whole batches of cookies and muffins, etc. too but you just can’t beat a mug cake for instant gratification.

This pumpkin mug cake recipe takes a whopping 3 minutes to make.  One minute of prep and two minutes to cook.

Occasionally I will split up this recipe into two espresso-sized mugs because one of those is the perfect serving for my 3-year-old.  If you do this I find it’s best to microwave them separately and watch them closely in the microwave if the mug is small.

Pumpkin Mug Cake

This pumpkin mug cake is flourless – made with almond flour which isn’t really a flour at all, but ground almonds.  I love the flavor of it – it tastes rich and slightly sweet and is packed with protein!

The recipe calls for pumpkin pie spice but if you want to make this asap (I don’t blame you) and don’t have any, just sub an equal amount of cinnamon.

For the sweetener, this mug cake is slightly sweetened with coconut sugar.  If you’ve never tried it before, coconut sugar doesn’t taste anything like coconut – not even a little bit.  It has a rich taste that is similar to brown sugar.  I put a range so you can customize the taste to be more dessert-like or more breakfast-like.

If you want to substitute for a different kind of sugar, lots of kinds would work well, just keep it to a granulated sweetener.  Cane sugar, brown sugar, date sugar, they would all work in this recipe.

For a keto pumpkin mug cake, use erythritol instead of the coconut sugar.

Pumpkin Mug Cake

This healthy pumpkin mug cake only takes 2 minutes to make in the microwave.  It’s an easy and flourless pumpkin mug cake that is paleo and gluten-free!  A yummy treat for breakfast, a snack, or a healthy dessert.

  • 3 tbsp almond flour
  • 1 egg (free range)
  • 3 tbsp pumpkin puree
  • 1-2 tbsp sugar (I used coconut sugar) (or any dry sugar (use erythritol for a keto version))
  • 1/2 tsp pumpkin pie spice (or you can just use cinnamon if that's what you have)
  1. Crack the egg into a small bowl and break up the yolk.

  2. Add the almond flour, pumpkin puree, pumpkin pie spice, and sugar.

  3. Mix everything together with a fork or whisk.

  4. Spray a mug or ramekin lightly with oil.

  5. Pour in the batter.

  6. Microwave for ~90 seconds.

  7. Depending on your microwave you might need an extra 30-60 seconds.

  8. Stay with it and only microwave 20 seconds at a time after the initial 90 seconds so you don't get a pumpkin mug cake explosion.

    I make a lot of Paleo mug cakes and need to find a good pumpkin one. But this was dry and the middle top never fully cooked. I’m going to try it again with some coconut oil and maple syrup, maybe less almond flour.

    1. I’m sorry it didn’t turn out for you Michelle. When I made it it turned out fluffy and moist. Sometimes it takes some playing around with the exact time on microwaves, since ours are all different. I hope it turns out with your modifications – they sound great!

      Hi Elena! I tried making an egg-free pumpkin cake version and I’ll be honest, I didn’t love it (tried with a chia egg). I’m hoping to develop a really yummy vegan pumpkin mug cake in the future! For now you could try this chai spice mug cake: https://bestmugcakes.com/chai-spice-mug-cake/. It doesn’t have any almond flour or eggs in it. For a pumpkin recipe though, you could try these pumpkin scones https://www.thecuriousfrugal.com/gluten-free-pumpkin-scones/ and sub the gf flour for almond flour (they already don’t have egg in them). You might have to adjust the amount of flour slightly. The dough shouldn’t be too sticky. Good luck!! 🙂

          Hi Patricia! You could sub applesauce for the pumpkin puree – yes that would work. You can’t use applesauce instead of egg in this recipe because it won’t set properly and would be more of a pudding. Have a wonderful day!
